Just, stuff to do that get you rewards aside from the main story line. I never really noticed a time where I could wander around the world and talk to people to get quests. Is it not like that in this one?

Omega's lair.
Celestial weapons (which contains a bunch of side quests in itself, such as chocobo training, cactuar village, etc)
Dark Aeons / Penance.
Monster Arena.
Getting all aeons.

Not really. Once you're past Zanarkind you'll get access to the airship to revist old areas easily.

A lot of stuff isn't spelled out for you however. The extra aeons, legendary weapons, and dark aeons just come through exploring.

Most of those are obtained through mini games.

"Celestial weapons" includes like 10 sidequests by itself. Chocobo, cactuar, dodge 200 lightning strikes, BLITZBALL, catch the butterflies and more
