Even in the manga the coliseum fighters running around happened for a great amount of chapters. Zoro vs Pica was scattered through a bunch of chapters, or "where is Waldo(Pica)" until the final showdown with Zoro. Franky vs Senor Pink was worse, their fighter was scattered through small panels in many different chapters.
In short, there was too many shit going on at the same time and Oda didn't pull it off right. The running chapters seemed like a damn endless filler

I wouldn't wish the slog through the anime on anyone. It's close to 800 episodes now. The manga will take you a while to get through but it's easier to go at your own pace and there will be quite a bit of new content generated by the time you manage to catch up. Those kids in PH had headdaches and would become insane for no reason. I wouldn't be surprised if Chopper actually helps Big Mom with the same medicine he used on those kids because he is a doctor and she needs help
