Not really much you can do. Rides will break down randomly, though you can minimize it by scrapping old ones and replacing them (which will increase your park value, since you're building a "new" ride even if it's literally the same one).

Even having a large number of mechanics and a high maintenance schedule wont stop all the accidents. You could:
Change the timing on trains leaving the station including forcing empty trains to leave before the last one returns.
Maybe have only one train if you can't get the scheduling to be safe.
Don't let the coaster have high energy at the end of the ride coming into the station. One way to do this is to raise the station platform higher and always have trains go up an incline before docking.

Intensity is dependent on how gaping G-forces are. Fun is dependent on how much G-forces fluctuate.
You basically want your G-forces to move back and forth but you don't want them to be giant fucking gapers on the graph.

I haven't played RCT2 but I'm digging the objectives behind RCT1's scenarios and some of the loops they throw you through. I heard RCT2 is more content and less restrictions but the scenarios have no pressure.

Yeah, there's still no sandbox mode in RCT2 either though. You have to build a custom scenario from scratch, as in landscape and choose all game objects individually. So he still made it as difficult as possible.

There is one scenario in RCT2 with no budget restrictions, almost all land bought, and attendees all want high-intensity rides to go on. Pretty much a sandbox even though there is a definitive win condition (nigh impossible though.)
