Capcom actually spends insane amounts of money on developing Monster Hunter. I think the budget for MH4 was like $80m.

The animations and textures and geometry are insanely high-quality. Take a look at the trailer again - the uploaded version, in higher quality. It almost looks like a fucking PS3 game. It's not quite there, because their textures are too low-res and the terrain geometry is a bit too simple, but they clearly spent a lot of time and money making it look good.

Not really. 3DS games literally run at MSDOS resolutions. There's only so much information you can distinguish at such low fidelity. Higher res means it's easier to see monster tells at longer distances.
