If the game has no support for widescreen, you can softmod your console and try using a widescreen cheat. Look for Open PS2 Loader and cheat support.

I'm pretty sure it's up to the game if it has 16:9 support or not. SSX Tricky makes you choose between 4:3 letterbox and 16:9 widescreen in the options.

I have deffo been making a mistake for at least two years since i got back into retro and PS2 gaming guise... I feel like such a fool. Didn't know my TV COULD go back to 4:3 or that it mattered...

I've gotten around this by applying a widescreen patches directly to game isos and dumping them to HDD

PS2 and GC only renders out games in 4:3. When you choose 16:9 option in games, it squishes the image for your TV to strech it back for 16:9 display.
Xbox got true 16:9 display.
