having fun, I played 1 and 2 and omg does 5 have SOO much more shit and QOL changes.

I haven't had a need to powerlevel, I usually catch up with the story levels via item worlding 10 floors. I actually ended up overleveling, and used the Cheat Shop to boost the enemies levels, and I'm really glad I did, this is a good challenging campaign

I'll take this Chara World over "spam 3x3 moves and run through a hallway 400 times to get your max aptitudes" that was D3/D4. All your other points are matters of opinion. I thought I was gonna hate D5's cast and story, but they're my favorite in the entire series.

This game is pretty difficult in it's own right, but I would hold off on using the DLC characters since they come with really good weapons and specials which would break the little ingame balance there is. Unless you raise the enemy level with the cheat shop, characters like Laharl and Adell will likely steamroll the game.

Are there any classes besides Sage worth using for their unique skills?

The ones that make your Sage stronger.
So like Professor if your Sage doesn't have 99m in every stat, Celestial Hosts to stand next to her if you aren't over the +200% atk dmg cap yet, another Sage for the extra action thing, etc. A couple uniques like Christo and if I remember right Mao fit that niche too. Just remember you need the Evility that makes you immune to allies' attacks so they don't die to Land Decimator.

D5 is a pretty easy game overall, I wouldn't worry too much about it if you just want to use some of the DLC characters because you like them so much. They do make it completely trivial though.
What you can do is just grab the class DLCs, so Celestial Hostess, Kunoichi, and Sorcerer. Those are just unit types you yourself can create so they aren't terribly overpowered

Yeah, the only ones I'd say you should have some prior knowledge for are D2 and DD2.
D4Vita is regarded as the best one by a lot of people too, have fun
