Legendia and Abyss, both on PS2.
Legendia is generally considered weak gameplay-wise with its overly simple battle system, and its visual style makes it the black sheep of the mothership series, but the quality of its cast (and incredible OST) makes it my personal favorite.
Abyss is far more widely praised and has many good qualities of its own, including its solid world, enjoyable battle system, and number of worthwhile sidequests.

If you're actually expecting good story and writing from a Tales game then you're going to be disappointed. That being said, the most decent one in that regard would be Abyss, get the PS2 version. Also you should definitely try out Vesperia on the PS3 if you have CFW, it's been translated and everything. If you enjoyed those then pick up Symphonia and try the rest through emulation.

Tales actually releases pretty infrequently after they consolidated their teams. Clearly X2 and Berseria rehashed a previous engine which makes me wonder if they'll do that with the next two entries. At the same time X2 and Berseria were made to make up the shortcomings of their part 1s.

I wish we would get another Tales game like those three. Vesperia PS3 version was probably the best Tales we've ever had. It was basically a refined Symphonia/Abyss and a complete package.

Then we got a series of awful to mediocre games filled with experimental design and bloat. Even the story and characters were awful, and that's going by the low standards already set for an anime-trope game. Fans are at the point where we just hope and pray that the next game isn't as bad as the last. I don't think Berseria is nearly as good as Vesperia, but thank god it brought at least some of the old Tales magic back.
