Pretty sure you can find aircraft carriers in the Silent Hunter games. Good luck killing one, though. Even if you get past the screening ships and patrolling aircraft you'll need some pretty good hits to sink it.

Though it's nothing special since it's just throwing 2 or 3 missiles on it and boom

I think War Thunder, not sure if it actually has
sinkable carriers but it has sinkable ships, they added playable ships but I haven't played in a while so I don't know if the games gone to hell.

This. I like all Battlefields, I have 300 hours in BF1 and still playing, but I'll always miss all the naval vehicles and those weird maps with like 18 tanks vs 18 tanks.
