But when I first saw them in Bloodborne they were so different from the usual style of everything else that I thought they were an easter egg or joke enemy.

1) Gaping Dragon is not a good fight, the only thing going for it is the spectacle.

2) Gaping Dragon barely even counts as a Dragon fight given how twisted and mutated it is. It can barely fly and it can't breathe fire or anything.
