Because E3 is right before release and they'll want the exposure of an exclusive rather than showing footage that has already been put on YouTube.

Plus there is always one or two 'demo available tonight' games at E3 conferences these days and Crash is a no brainer. They'll already have a demo on the show floor as they've used them for feedback throughout development so they may as well release it to the wider world too.
