Depends on the person and their build. Some people will say that the Chalice Abhorrent Beast and Watchdog are top-tier stuff, but they're pretty weak imo. Defiled Amygadala would be hard for most builds, but an ARC character cheeses the shit out of it.

Ballsack man on the beach - 3 tries
Wassatsmell, issitblood? - 2 tries
Clocktower Coo Coo Bitch - like 6 tries
Garden Variety Aliums outside the clocktower - 2 tries

It looks great, plays great, has an amazing setting, genuinely creeped me the fuck out with people embedded in buildings... but it was not fucking hard by any stretch of the imagination. Shit was easy. You can seriously just run through every area of the game.

Rom in the chalice dungeon is like umpteen times harder than the boss fight rom. Boss fight Rom is not even worth mentioning concerning difficulty. Chalice Rom can one shot you, and is surrounded by 30 dudes that can stun you, and do 50% of your health in one hit.

You do get less vulnerable to one hit kill attacks or deadly comboes, but thats about it.

Vitality is one of the best stats in that regard since blood vials scale with your health unlike Estus Flasks in Dark Souls, so leveling up Vitality is almost never bad.

However no matter how much hp you have, a scrub will remain a scrub, and will die regardless until he gets gud.

BB was 2 DLCs mushed into one (working on Maria was probably when they realized they should just merge them) and DS3 was just some weird epilogue of sorts.
Unfortunately, the series itself didn't work its way up to a point where it really needed a further epilogue since everything was already vague and fucky, so we got the stupidity that we got. A literally who who is fun to fight and purposefully remarkless was a neat finale among the other bosses in there, at least.

It always amazes me how much self wanking goes on with souls games. Most of the fundamentals of combat and bosses are from ninja gaiden, which are objectively harder games in their own right.

I thought BB was kind of disappointing.

Orphan was the only boss I thought was legitimately challenging and required more than 1-2 tries to beat. Even with him your ability to dodge 500 times and chug 20+ potions didn't give me much of a feeling of accomplishment.

The only enemies that are more difficult with high insight are the ones who give you frenzy status, which are extremely uncommon, and the witch boss, which is the easiest boss in the game anyway. There's no reason to hoard insight, but there's really no reason to throw it away either.
