Nearly everyone has a cellphone, so just program the game to work best on those operating systems and then port it to both consoles and PC. 2 has the most replay value and the most pretty much everything. It's the most "video-gamey" entry in the series. Individual areas are not as strong but the game is very open and you can progress through the game in basically any order you choose. Physics and other things being tied to frame rate is common with Japanese games in general, it's a problem they collectively have to overcome.

The first game had some problems with an uncapped frame rate too, jumps wouldn't always function properly, causing you to fall to your death, and sliding down ladders can eject you from the map. Difference being the weapon degradation in 2 has been fixed while the issues with the first game haven't, and possibly can't be fixed.

You can get a branch from the hag merchant for 12K souls, which is basically at the start of the game. You can do the forest and go to lost Bastille, you can go to tower of flame and then the wharf or huntsmans copse, you can use the branch and go to shaded woods and beyond, you can buy the silvercat ring and go to the gutter or grave of saints, you have a lot of choices and each choice opens another set of areas you can also do in pretty much any order. You can even skip half the areas if you farm enough souls to open the shrine of winter.
