Same here. The only boss that's difficult is Madarame, and by a large margin too. The difficulty spike for his fight is huge.
It's the only fight that takes any strategy. Every other boss fight is just "Spam strongest attack, then guard when the boss is using it's big strong attack". Kaneshiro in particular is a complete joke. Futaba's boss is also extremely simple and overall pretty boring. The hardest thing in her palace is the Anubis that you can sometimes fight. It has no weaknesses, tons of health, and it can cast insta-kill on Joker at any point.
Okumura is a a little boring but at least it has some new mechanics to it and takes a little strategy (ie. managing your SP against the hordes of mobs, dealing with the constant Big Bang Special every other turn at the end and curing the constant Hunger being applied to you). It's not perfect but it's an improvement.

P5 was one of the few SMT/Persona games that didn't have a dungeon that made we want to quit the game. Most of them went on longer than necessary. A few floors too many and they all left a bit of a bad taste in my mouth.
But none like invisible wall dungeons in SMT Nocturne (candelabras?) and conveyer belt floors into warps and walking off the map in Strange Journey. Or the abandonded ship in DDS2. Or the last SMT4 Apocalpyse dungeon. I hated all that stuff.

It's such a hard game to review. I did it in about 100 or so hours. But I think the game legitimately took about 20 hours to get interesting and also break out of tutorial mode. Then you don't get any good plot hooks until Futaba's palace. But right when you think it gets interesting the pacing falls apart.
Then nothing interesting happens until Sae's palace. But the true ending feels a little forced and obligatory. So it had some good moments, but in 100 hours it wasn't quite enough for me to say to someone who isn't into JRPGs that they should play the game. If you know P3/4 you know P5 and you'll feel the same way about it that you did the earlier games. So in that sense it is good.
But pacing is bad. It forces you through days when it doesn't need to and when it does need to do so it doesn't/

P4 was definitely the worst about it. You could end up not throwing Namatame in the television, but if you picked a single wrong dialogue choice, then it would skip you ahead to a bad end, which really just fucking ruined the tension with Nanako for me, which her being alive made me cry for like, 10 minutes straight.
The true ending feels extremely unavoidable if you play the game correctly.
