2 - Classic RPGS. You need to figure out the clusterfuck system like D&D in Baldur's Gate, then it gets easier.

3 - Any multiplayer game with matchmaking. no matter what you do, the game matches your level. It will never be too easy or too hard.

7 - Point and click adventure games. The easy part is collecting clues and doing the easy puzzles. And then you have 17 different items in your inventory and you're supposed to solve the dumb arbitrary big puzzle by combining the toothpaste with the credit card.
Then you get to the next act of the game, your inventory is reset, easy part comes again, then it spikes up again.

8 - Study flight sims. You can figure out how to do basic flight maneuvers relatively easily. The first spike is trying to figure out the weapons system. Then you can start killing enemies. The second spike is trying to master all the navigation systems.

The first playthrough of a lot of Character Action games (DMC, Bayonetta, Wonderful 101) end up being like 5: it starts easy enough as it teaches you how to play, then it starts getting hard, but once you get the hang of things you're taking care of pretty much everything the game throws at you.

Later runs on higher difficulties or just to get better ratings on the same difficulty are just slightly curvy lines that are otherwise straight, barring some spikes for particularly hard or easy moments.
