Actually I've played both and enemy ai variety is definitely more prevalent in Zelda than in Nier.

Outside of bosses, Nier's enemies have 1 or maybe 2 moves where as if certain objects are in the environment or if your high enough or far enough away in Zelda, the enemies will find objects to throw or even throw each other to reach you.

The immersive sim elements definitely put BotW above nier in combat variety.

I wish Zelda did more with the enemy distributions. It made the enemy AI shine whenever you had to face against many types at once.
For example, It was weird to me how wizzrobes spawn in a manner similar to minibosses, but they're capabilities are closer to an early-mid game enemy. In the rare occasions where a wizzrobe is spawned with other enemy types, shit was hectic and fun.
