You can't be killed in a single attack from full health, aside from fall damage. All you need to do is horde up some 3heart recovery food and you're unkillable until you run out.
The only reason to get more hearts is to pull the master sword.

It seemed to me Level Scaling was more a critique of immersion breaking that low level bandits would now hold great weapons because you had them.

I think the point OP's trying to make is that Ganon is much easier when you've completed the Divine Beasts (who give you a Heart Container each, so it's the only way to get 30 hearts)
