The current Steam Machines should be thought of as like dev kits for the Steam Machines to come.
Valve is currently investing an unusually large amount of money into GNU/Linux exclusive open source drivers for modern AMD hardware that doesn't make any sense.
Unless they're working on a second gen that addresses the problems the first gen had like having to use expensive Intel and Nvidia hardware and having no firm hardware spec profile.
As for SteamOS it only really makes sense for prebuilt systems for OEMs, end users installling systems on their own are going to want a more up to date GNU/Linux system.
At least until we're to the point that it becomes as easy as RetroPi.

Steam OS appeals to nobody. Regular people don't want to fuck around with linux and /g/ people don't want valve running their PC.

Sure right now its hard to see what the point of it is.
Consider for a moment though that we're only a year or two away from the possibility of a sub $100 single board computer using an AMD SOC chip capable of running the majority of games on Steam.
That's the world where SteamOS makes sense.
Think of how popular Raspberry Pi or other single board SOC based retro consoles are today.
Imagine how huge a "Valve Mini" pre-loaded with games would be.
Most people investing in a steam machine probably want to have a computer for more than just video games. It's kind of a weird, niche thing.
You could use a steam link if you really want to have your PC games on your couch.

Reminder that the Valve funded open source drivers for AMD hardware (Mesa) are faster and more stable than AMD's official drivers and still getting faster.
New patches today that once again increase performance substantially.
