When arguing for (or against) a "post-game," you're bringing up the fact that the game in question has narrative structure. Now, whether that's a good thing or bad can be debated until kingdom come, but by wishing for a post game, you acknowledge that narrative structure exists.
In other examples of narrative media, post-story inclusions are basically non-existant, and when they do appear, they are super short and add nothing to the experience but a bit of catharsis or humor. In novels, it's an epilogue chapter. In film, it's the post-credits stinger. In a musical album, it's the shitty bonus track.
Point is, post-game is kinda neat when it's there but not (or shouldn't be) missed when its not, and hardly worth consideration when judging a video game.
