Single player? Turn that speed slider down. It's your main way of adjusting the difficulty.

are you sure it was 1 base? 3 hatch hydra is usually 2 base

Read some guide about scouting. I haven't played this game in a decade or so but scouting is much more important than it is in sc2. Scouting signs are much more subtle in BW and you should learn them.
