Why does early FPS have such a large cult following?
Because they spawned a whole genre and revolutionized the video game industry?

I still replay vanilla DOOM pretty regularly, and enjoy it.
Game design was more akin to a japanese game, everything sort of had its purpose and the game was balanced in such a way that it could be mastered.
Nowadays it's all "realism" and hitscan weapons.

I really don't know how to answer this question without being redundant.
So how about the idea that does games back then were far more fast paced and challenging early on, which the genre would later make slower paced and "realistic" with games that would focus on World War II/ realistic warfare, slow running speed, limited weapon equips, more hitscan based combat and enemies, more cover based combat and so on. Years of this slower paced games have caused many people to get tired and bored of them causing this new resurgence of fast paced FPS
Doom 1/2 is still the best FPS ever made.

It's basically a 1:1 replacement with all the sci-fi and tech replaced with magic. There are technical enhancements, like an independent item inventory, flight, transparency and sound effects not triggered by entities in the map, but it's mostly "Just Doom with magic."
Hexen built off of Heretic's enhancements to Doom and pushed the engine to its limits though.

I think the enemies in Heretic are a lot more easy and simple compared to Doom. You can blast through most of the game without much problem.
old shooters = much faster, varied enemies you need to adapt to, puzzle solving, secrets, light platforming, eccentric artstyles, resource and power up management, large open maps, varied weapons
new shooters = walk through a corridor, shoot and take cover, do a qte. If you die you respawn 10 seconds back in time

It wasn't a cult following then. Every nerd who plays video games then flocked to shooters when Doom came because it revolutionized video games as a medium, it showed the potential of PC's as a gaming platform and it also offered multiplayer in its earlier stages. Also art direction.
