For Universal Century, start from the beginning. The 0079 movies are pretty good, but you should only watch it if you have too much trouble getting into the first MSG show. The Zeta movies are noncanon and should be seen after you've gotten through at least ZZ so you know what actually happens and what leads into CCA. Unicorn is pretty shit story-wise, but the fights are great and feature bar none some of the best UC action in the franchise. The OVA's for UC are all in the range of meh to great. After that you're pretty much fine to watch whatever else you want. Build Fighters is special and should be seen once when you first start watching Gundam, and again after you have a few OVA's and series' under your belt. Avoid Destiny and Try like the plague.

From what I've heard other people say about the series, Gundam Versus games usually have some type of story mode, but Extreme Versus games don't really have much for SP content. That's all we have to go off of currently since they haven't really talked about it much aside from Suit announcements.

Mobile Suit Gundam '79 if you want to get the most out of the series and start from the beginning of the UC universe (the biggest and longest running timeline).

G Gundam is great if you want Dragonball Z with robots

00 takes a lot of elements from various series and is pretty good. A lot of people will tell you S2 is trash, but I urge you to form your own opinion.

Any of the 90's OVAs are good, but you'll get more out of them if you've seen '79 and Zeta.

Really just find one that looks cool and go with it.

I think it's really good. The animation is a bit aged, but the story, characters, and overall development were pretty good. I still think it holds up pretty well to this day.

You can watch either the full series or the compilation movies. The movie cuts out a lot of filler episodes, and have generally improved animation (especially in the 3rd one), but cuts out a lot of character development. It's really up to you which you choose.

the AU series are hit or miss ESPECIALLY the ones that came after 2000, minus unicorn and thunderbolt, possibly reconguista (havent watched all of it yet but it is directed by Yoshiyuki Tomino, which is usually a good sign)

G-Reco is probably the biggest hit or miss Gundam show ever. It is literally the most Tomino you can get out of any show, so it all comes down to whether someone can enjoy the mind of that madman.
