So what kind of interesting combos are there? At least now you don't have to force yourself to make Vaan, Balthier or Fran into the white mage because you can just combine white mage with a class that has steal now.

I can't agree. He's not really relevant to the plot. He had some spotlight, then sat in the back for pretty much the rest of the game. He does help Vanille develop as a character to some extent, and vice-versa. He does offer a voice of reason in cast that's pretty distraught, though. While not a bad character, again, he's not the most interesting one, either.

Additionally, Hope gains resolve on Gran Pulse after going through a stage where he questions his strength and value to the group. He had to kick the shit out of Alexander and realize where his place was. To say that he doesn't grow immensely in the game is just wrong. He goes from a bitter young man to one with some serious resolve. If there were a "most improved" award I could give to a character, it'd be him. Easily one of my favorites in the game.
