Because they're the most common style of sword in Japan and they have a unique appearance in comparison to a standard broadsword. Plus Bushido paints them in a mystic light like they're oh so very special unlike crude European swords, even though European swords are much better combat-wise.

Katanas are fantastic for cutting. Unfortunately cutting in combat is inferior to stabbing if you are aiming to cause lethal damage to your opponent. You also need to be a lot closer to an opponent to cut them effectively so it just makes the Katana a very niche weapon. Spears and Bows were the real might of that era. They were also a LOT cheaper to manufacture.
