The PS1/2 AC games made me kind of want to start out as an MT pilot and work through the various applications before taking the Raven exam. Have the entire scale of the game change from having to worry about the relatively big and scarry MSG-like ones with cannons and shields up to blasting by them on the way to real objectives

You can honestly just make a Tau battlesuit in most AC titles anyways, especially ACVD and ACFA. Weapon Arms are your friend.

I'd kill for AC6 to be about the rank ascension from some shitbar MT garbage (or maybe even a vehicle like a tank or something) to your first junkyard AC to eventually a top-level AC, and eventually even packing NEXT-level tech or Ultimate Weapons and standing out among all of your peers. Although personally I still want a Mountain Blade style game where you can guide armies of tanks, helicopters MT's,
Normals, non-AC war machines, and in small doses, full-powered AC's against opposing military forces, all the while piloting your own AC.

I Stopped playing 40k a couple of years after Tau came out.

Well, first they declared themselves a "model company, not a game company" so they could excuse themselves of any and all balancing criticism.

Then they started releasing huge, incredibly expensive centerpiece models that were ridiculously powerful (Riptide, Imperial Knight, Stompa), all this after they had gotten rid of the Apocalypse game mode so you could use huge models in normal games. It became a joke where every new codex was the best codex, because they were designed to sell the newest models.

Then they started releasing formations, which are essentially premade lists of units with specific loadouts that if you took, you would get a special rule that would apply to all of them, or they would get free upgrades. GW used this to make people buy loads of shit they didn't want just to get access to broken rules. There was a Blood Angels formation that was 30 Tactical Marines in 3 Stormravens that would let a squad of Death Company deep strike without scattering and assault on the turn they came in.

30 tac marines. Completely useless outside of the formation.

40k game with world of tanks mechanics
but you can also play space marines
tactical marines would be tier 1 units, you can level them up to devastators, then terminators and finally to actual vehicles of the spess marines. The various land raider patterns would make up the top tier units
for IG you start with transport vehicles ala chimera and upgrade your way to the leman russ and finally to the baneblade
do the same for chaos and orks and you got a good start
