Pretty sure guards comment on your character build and that involves your race. Some quests have specific options/dialogues. I remember I was able to walk through Thalmor embassy no questions asked as a Bosmer.

The build remarks are incredibly easy to get though. For example, even if you just raise up Conjuration to 30~ you'll get its related comments from the guards.

Thalmor Embassy I think is the only quest where your race actually does something.
