Her character arc in Remix Heart is fine. Mai comes to accepting herself as she is, she learns how to open herself up and to trust others after being taught to see everyone as potential enemies by her paranoid father, and she gains self-confidence and a sense of self-worth that she previously lacked due to failing to meet her father's impossible standards.

Also Mai had a powerful grimoire fully fuse with her body; that wasn't something that could be easily removed and as long as she was fused with the grimoire she couldn't undo her transformation. It made perfect sense for her to be stuck in that form.
