I think it's just to make things easier in every way - the team didn't have to think about what the parents thought about the main character and his crime, and it'd be easier for the player to identify with him, since he's starting a new life with no ties to his previous one. It does come across a bit odd, but I don't think the parents were meant to come across as jerks. That said, they could have included some small mention once in a while, like Sojiro saying that he's told your parents you were doing well or something.
