You probably know to use a torch to light the windmill on fire so you don't have to fight the medusa boss in poison. Other than that, don't hesitate to immediately use a poison healing item like moss or the charms. The game will give you a ton as you go.

Something like this. Gael was originally human where Artorias was not, iirc. Humans can wield the Dark whereas one of the god race would be consumed by it. In the midst of a full Age of Fire, Artorias would shit all over a crappy slave knight. At the end of all things, with the Dark running wild, Gael would easily have the advantage.
If we stick to purely comparing the forms of each that our player character encounters, Gael would obliterate Artorias. His moveset is simply too diverse and aggressive compared to a DS1 boss.
