I was present at E3 2001. They had Melee there, but only a few characters were playable and Peach wasn't one of them
However, I do specifically remember they had a video reel of the game, and in one sequence Peach ran away from Bowser on the Mute City stage - with a custom camera angle.
It was so low you could not only see her legs, but also a glimpse of her panties. Today that's common everywhere, but back then I still remember what a shock that was to see.
That video reel was only visible on the show floor, because they edited out that specific sequence in the reel that was given to journalists.
