While it sounds stupid, there, in the moment, nat 20 to do "stupid thing" is some of the greatest shit in any campaign.
A good rule of thumb is they must have at least some proficiency in what they want to do to be able to perfectly do it on a nat 20. Say, a Barbarian who only SMASH things can't suitably seduce a slime, but they could seduce an Orc with a fetish for smashing things. Can't pick a door, but can simulate picking it by strategically SMASHING the lock. The player just needs to know how to say it right or be in the right situation.

Circumstance depends.
Was the character who seduced it a druid? A Wild Mage? Another Ooze given sentience? Was the Ooze under any effects from fucking around in the dungeon? Etc.
I do agree in general seducing an Ooze is a bit stupid, but like I said, it's interesting and fun in the moment.
