You get 2 of them instead of 1. Because you've dual wielded them, you have 2 of the weapons listed with their stats equipped at the same time. Whilst dual wielded you are hitting with the same weapon twice where as normally it'd just be once.

Assuming the haste items are one-use and the fireball is multiple use, can I break the game by equipping the fire sword and spamming fire balls? Even if I can't avoid melee with the other player indefinitely, I should still be able to whittle down their health with fireballs from a distance, and attack them with the sword at close range.

Yes, assuming your speed out paces theirs and they don't pick a set up that out ranges you. If they have a pistol/crossbow or a fireball themselves, they'd fuck your shit up though, since you take more base damage.
