the Beta version had more content, enemy variety, movement options and a temperature mechanic.
They literally removed alot of things and added a story mode with indestructable terrain and walled off boss arenas for the "Finished" version

Honestly any version will fit that, but... sadly that's all the game has going for it. Planet variety however, is and always has been a clossal trainwreck without mods, but even they just add more cars to the trainwreck.
