I haven't seen that many openly Muslim characters to ship. Tbqh, any characters that aren't Christian, Jewish, Shinto, and Buddhist are pretty rare in media. I've thought of making a thread about the concept on /co/ since I know We Bare Bears has a hijab wearing background character (isn't there /u/ of her?) but they'd start a fit.
I know a lot of mythology has a bi lean. Greek and Roman for sure. Probably other cultures too.

I do think a few pics on Deviantart exist of cute lesbian Muslim girls holding hands. However overall, Muslim characters don't exist in western media. Until a decade ago no one even knew about the religion. Companies are slow to take up diversity when it comes to religion because it's such a controversial topic. As for their belief, it seems awfully superficial. They seem to believe there's a benevolent spirit called Maria-sama looking after them, but that seems to be about it. There's no talk of baptism, confession, the original sin or even Jesus.

Statistically, most Americans and Brits are Christian but most don't sit around muttering about Jesus 24/7 unless they're very religious. Most don't even go to Church. Buddhism doesn't exactly go against Christianity, plus you can like Buddha and still be Christian. Plus most Christians are not exactly strict. I know many who believe in ghosts, reincarnation, and other things that go against their text.

I actually went to an all girls school. Girls liked to experiment because there were no guys but as soon as we graduated almost everyone of the "lesbians" started dating guys. I'm pretty much the only lesbian to come out of that school.

Can confirm. I went to an all girls Islamic school though, and one of my friends was this charismatic turbodyke who dated 4 girls at once, all of whom started seeing guys down the road. Only me and a couple of my friends were the only actual lesbians around as far as we know. The cyute onee-sama adoration and girl crush thing is real but they're usually nothing of actual substance.
