I must be missing something. In the game when I go into the dressing room its always the one character, and you simply choose the clothes she wears. What do you do, or where do you go to make the two girls do things together in the dressing room?

In the dressing room you can only poke the girls using the touchscreen/dpad and once their rack rank gets to 20 you can play the Heart Catcher minigame by using triangle to give them a massage. There are no diorama mode if that is what you are looking for.

The only way for the girls to interact together are the romance scenes that you unlock by tapping the floating golden hearts.

I didn't know you could poke the girls. I'm guessing the girl you use for poking is the last girl you used in the dining hall, and that if you were the girl you are changing clothes for then you can't do anything to her. Guess I'll have to experiment with it.
I beat the regular part of the game (Chaos), but haven't done anything in the dressing room yet between any of the girls. I also haven't bought the Mermaid girls yet, but I plan to.

Indeed the girl in the dressing room is the one you are playing as but you can easily change between all the cast by using the R and L buttons in the dressing room main screen.

Just a little advice, currently there is a weird bug present in the game that may cause a crash when you go the dressing room via the dinning room. You can avoid this entirely by using the main menu to access the dressing room.

Anyone else get an urge to equip Mamori with the Tokonome after they got it simply because of its name?

Yep, just pausing and unpausing fixes this problem, luckily. Unfortunately, in survival these "shadows" can still put out hitboxes even though they cannot be hit so you should pause as soon as you notice am invisible enemy by the shadow on the ground.
