tl;dw: Eva revitalized the concept of TV original anime (which was non-existent in 1995), proved that you can have dark and psychological themes in a cartoon, proved that you can be artsy and weird and still be a mainstream hit.
Without it, all those /tv/-approved classics like Bebop, Lain, Texhnolyze, Ergo Proxy, Paranoia Agent (and all of Kon's work) would probably never have existed.
