Why? Unless you have scenes set there it doesn't matter.
Correct me if I'm wrong but we really only go to 5 planets in the OT? Tatooine, Hoth, Degobah, Bespin, and Endor.
An entirely arid planet is possible, and it's a none to subtle lift from dune, which spends a lot of time explaining the ecology of a desert planet and why it maintained a single biome.
Hoth is an ice planet. We have those in our solar system, it was theorized that earth at one point in its history was a frozen ice ball as well.
Degobah seen from orbit had a lot of green and blue, and was mostly covered in fog so you really can't make assumptions about what the rest of the planet is like outside of a few square miles around yoda's hut. If you look at the picture of degobah it's pretty earth like in appearance, just less brown and beige parts.
Bespin is a gas giant. What do you expect to see but clouds?
And Endor is kind of the same thing as degobah. But smaller. It even has visible ice caps.

Realistically most planets would only consist of one biome, but Star Wars does absolutely have many planets with varied locations.

That said, the OT + TFA is guilty of the single-biome planet cliche, TFA much moreso due to it being an intended rip-off.

The Prequels/TCW/Other Canon media made by George or Lucasfilm showed much more diverse locations, and many that obviously could not be found on Earth.

Global culture is and isn't a thing, it depends on where you live. At places American culture has infused into local, some places are still relatively free of massive foreign influences.

Star Trek homogenizes alien races to a level where there's only one language, on religion, one way of thinking etc. where as Earth still is a potpourri of things even in most homogenized areas.

Humanoids of the Star Wars galaxy didn't evolve on the planets they inhabit, they're immigrants through the Empire's growth. I think. Did the nerds who wrote all the backstory have them originating from earth? Anyway, it makes sense that human life would be seen on planets that support human life. Yep, Luke's environment was representative of how he felt about his life. That's why the Cantina is such a freakshow too. He steps out of his element and everything is just weird shapes and noise and he almost gets killed before his adventure even starts.

The Death Star is incredibly big, cold and hostile in it's own way. It's unnaturally clean compared to Luke's home and all the rusted shitbuckets that pass for spaceships.

Yavin 4 is lush and green. A garden. Something worth preserving. Nature. Purity, all that. They even operate out of an old temple to reinforce the notion that it's a peaceful, spiritual environment.

In Empire you get similar thematic settings. Hoth is another remote, inhospitable place. So they make it snow and ice. Dagobah is another Cantina-style overload of weirdness. Cloud City is dreamlike, with a nightmare hidden inside. Luke falls from the clouds down a dark chasm as he learns some unpalatable truths.

Jedi returns to Tatooine to show how Luke has changed. And to have Han finally separate from the background that's been haunting him through the series. Quick return to Dagobah, again to show where Luke is in his journey. Forest Moon, the Empire and it's machines has now invaded "the garden" setting and must be pushed out. Ewoks should have been Wookees to round of the character arcs. We saw Han finish his arc. We should have seen Chewie finish his. Final battle is a repeat of the first movie. Again, Han should have been flying the Falcon. He's leading the attack, not just coming in at the last minute. His loyalty now expanded to the whole group, not just his buddy/brother. Luke faces the dark truths about himself in the form of Vader and the Emperor. Another dark environment. Spiderweb windows denoting the trap that's been laid. And another dark chasm underfoot.

Environments that reflect the characters' inner journey are a shortcut to our unconscious minds and will leave the viewer feeling like they had a richer experience.
