First 10 Seasons of The Simpsons were good, yet incredibly overrated.

South Park was consistently funny until they started season-long storylines. I couldn't finish the last season it was so bad.

Family Guy was good through its second cancellation. It went downhill fast when it started airing on Adult Swim and the normies latched on to it.

The original run of Futurama was great. Haven't seen any of the newer stuff.

Archer was always shit. Rick and Morty is somehow even worse.

During season 2 Fox announced cancellation, but elected to change their mind and order further 13 episodes which would become season 3.
That is the first "cancellation", though in the end it wasn't really a cancellation. After season 3 the show got cancelled for a second time, this time for good.

However they sold the rights of the first 3 seasons to Adult Swim, it became a huge hit and 4 or 5 years after season 3 had originally aired Fox decided to renew the contract, spawning season 4.

It's a collection of cutaway sketches loosely tied together by an episodic self-contained story. At best it's totally unexpected and hilarious, at worst it's cringy randumb humor. How much of each you experience is totally up to your personal preference and if you like macfarlane's style of humor.

Roger was probably the funniest character MacFarlane has ever written and if you strip the trivial details like him being an alien it's just the good old "overly flamboyant but not actually gay" character from endless sitcoms. But you're right it works.

One big thing I disliked about FG that didn't happen in AD was MacFarlane's insane ego boost circle jerk. Using Brian as a soapbox to voice all his opinions as divine wisdom (and even voicing Brian using his regular talking voice) got really old fast. Even after he realized what he had done and started inserting faults to the Brian character he still remained the one voice of "reason" on the show. So now he would preach about gender equality or marijuana legalization or whatever, but then do a funny dog thing like eat poop from ground. MacFarlane lacks the awareness or the self-confidence to actually make fun of how Brian always thinks he's on the side of "reason" against "everyone else" because that's not Brian, that's MacFarlane speaking through a cartoon dog.

Louise and the son were boring. Stewie had potential and I honestly think he had some good lines but somehow never crossed the line to be funny. Stewie unfortuanately got very very bad. I don't know when because I skipped around. Brian got annoying as you said. Early on he was actually kinda pathetic.

It's so bizarre that Seth's best show, American Dad, which I could at least appreciate, isn't even nearly as popular as FG which has maybe ONE episode I liked (about Stewie trying to prevent the conception of a brother. Though I probably wouldn't like it now)

its peak was the single greatest stretch of 5 seasons of any animated sitcom (2-6). The amount of genuine care and sharp writing that went into it was unmatched at the time and has yet to be contested. Perhaps south park comes closest but even then south park's golden seasons are uneven in quality.

The creators of south park and family guy have even admitted to being fans of the show, and have made jokes about it in their own shows (imitation sincerest form of flattery).

Family Guy literally has multiple jokes about how Family Guy is just a shitty clone of the Simpsons. It goes beyond just being "fans of the show", all these modern cartoon shows about a family (which is nearly all of them) are basically a twist on the Simpsons and open about it.
