Are you actually comparing that hack Joss Whedon with Raimi? Of course there will be some amount of jumpcuts in an action scene - the difference is Whedon abuses that technique to the point where it's literally painful to watch, while Raimi uses it very moderately. Raimi's movies also have their own unique visual style and a lot of shots look like they're straight out of a comic book.
