I actually thought the premise of the rest of the film was interesting, rebuilding after a zombie outbreak and having a major political power taken out was something they should've explored more

Things would carry on mostly unhindered. There'd probably be less traffic fatalities even.

The worst of the infected would probably be killed off by their Rube Golberg-esque death machine architecture. Hordes of infected falling through hollow sidewalks, being squished by loose walls, being run down by the dozen by oblivious bus drivers with zero peripheral vision.

Things would be over in a week. The population would grow.
