They basically dropped them as antagonists after the second season, since no one ever really found them threatening. Also, they were pretty much all played by Jews, who found them terribly fun to play. Nothing says "Jewish humor" like making fun of Jewishness.

Ferengi are supposed to be contemporary humans, in the same way that Klingons were humans during the cold war.

They were meant to represent Western mercantilism and sexism with the appearance of ferocious goblins, but Gene was too retarded to realize they just look like goofy Jews.
