Jon leaves Sansa to do the day to day governing and spends most of his time at Dragonstone, sad, unhappy and becomes a recluse
Sansa becomes a less vicious version of Cersei as she ages. Bitter, unhappy, married to her people. Unlike her own mother, she cares well for Jon and Daenerys' son as well as their own children.
Final "holy shit" moment has already been guessed. This entire story is a flashback from Samwell Tarly who is recording it all as "A Song of Ice and Fire."

To prove I am not bullshitting you I ask you to pay attention to the casting in the weeks and months to come. You'll read about casting for older people and when and if you wonder why, the final scenes in 8x06 will be a flash forward to the present time in the story to Jon's death followed by a final scene featuring the ascension of he and Daenerys' son to the throne.

But I always assumed that GoT was going to end like every real civil war ever where the 'generation' and factions that started it invariably fall/are spined by some random third party no one ever paid attention too right at the end (eg war of the roses, the three kingdoms).
