It's one of those things you get a hold of when you just learn more about history in general. It's difficult if you just try to rote memorize every English Monarch in succession but it comes naturally when you can fit specific dynasties into an already existing command of medieval history.

Same thing with Roman emperors. Nobody on Jeopardy has every one of them memorized front to back, but a lot of them probably know a decent bit of roman history in general so they know what the answer ISN'T and what it could be. Anyway, Jeopardy Trivia is rarely above surface level so even if you just have layman understanding of a topic you'll probably know enough to answer whatever question they ask.
