I liked this episode. Every other episode on the show is so focused on the plot moving forward at 100mph with le crazy cliffhangers. One episode which just shows Walt trying to do his "job" and cook while having some kind of reflection on his new life/craziness was alright.
The fly is a metaphor for his consciousness that keeps troubling him.

It's possible that he has a connection to the character, and having a whole episode that focuses on character building rather than plot advancement was something he enjoyed. And having it take place in one room might have been a challenge to him that he also got joy from.
