Why is melee fighting so shitty in films?

How would you make it non-shitty without either risking your actors getting seriously injured or hiring expert stuntmen and then having to either make weird edits or cgi your actors' faces on their heads?

this literally has to do with not harming actors and shitty editing.

Because you can't for obvious reasons, go the full distance with it.
You can't make real strikes, whether to wound or kill, so it must be by it's very nature a choreographed performance.
On top of that, there tends to be a lot of nonsense like flipping, spinning, rolling and chit-chat going on. Remove those and you might have something closer to believable, but they are always 'holding back' and I don't think a real fight-to-the-death can be adequately faked.
Also fuck off the shaky camera bullshit, it's used to camouflage the fakery but I think it only draws more attention to it.
