If you've got the balls and the know-how to actually transition (read: change (read: 'adapt')) the source material into a format that works for the screen you can adapt literally anything, you can adapt abstract poetry or whatever the hell you want

The name of the rose was supposed to be unadaptable/unreadable, but that turned into a masterpiece of a film.
So no, I don't think there is such a thing as an unadaptable book for screenplay.
