Bran can't change the past. He can only go back and see what has already happened. Bloodraven says explicitly what is written is already written.

The only reason he was able to do so with Hodor was that he was with present day Hodor and past Hodor at the same time causing a sort of psychic feedback. Hodor was already Hodor so it had to happen.

The "Night's King" in the books was a human man who took a white walker for a wife (there are female white walkers in the books, along with male children of the forest), not a walker himself. But he died ages ago and has no relevance to the plot. The walkers either don't have a leader, or their leader doesn't fight.

It's still the same basic plot in the books, but without a singular big baddie that the audience can root against like in the show. As far as changes go it's not too bad, at least it's not going against a major character arc or a central theme or anything like that, like so many other alterations.
