General consensus is that the second is worth watching. You'll probably not want to bother with the prequel unless you become really invested in the series.

I really like the second one, it focuses on Brigitte after the events of the first film. It has got a darker tone and not as much humor as the first one.

The third one is a prequel set in the 1800s. I didn't care for it much, but it's better if you judge it for yourself. I've heard from some people who actually prefer the third one.
