You can see that the Lannister army is stretched out in march formation. If the entire army was there then it would be something like 20 miles from head to tail.
The tarly man even says they're stretched out thin.
The Dothraki use a classic tactic, cavalry raid against a marching army, so the dothraki can achieve local superiority, do some damage then leave. It's a small skirmish, not a decisive battle.

Of course maybe in next episode the showrunners will pretend it was a big important battle but I don't think so.

The Dothraki aren't really analogous to the Mongols though. The Dothraki have literally no armour at all, and seem ideologically opposed to wearing anything other than dirty tea-towels, and their weapons are trash against armoured opponents -- see that early Jorah fight. I don't think they have any concept of siege at all, which the Mongols excelled at.

They can, or at least are only at their best when, skirmishing with horse archers, or crashing into mostly unprepared people on horseback.
