At the current time after all the battles and the war of the five kings let's assume they have left with 40 000. Then some of the tweet bannerman supported them so the army should be around 50 000.

The Lannister contributed the primary field army, especially before the Battle of the Blackwater, with relatively little help from Highgarden. Desertion, disease and actual combat losses should have halved their numbers at least. I don't suppose the houses of the Crownlands are worth more than 10k effectively, and the Lannisters may not have had the organizational capacity to bring in fresh recruits due to internal power struggles and lots of "changes" in "leadership". Even a barebone garrison at Casterly Rock should require 500-1000 men, and the Goaldcloaks are too unreliable to let them run the city without at least 2k loyal Lannister soldiers permanently stationed there.

Then there are preparations to be made for the coming winter to be made and leaving the army in camp would be a bad and costly idea. Most bannermen would have been sent home and who know how many will properly remobilize after the disasterous succession of Cercei. I'll be harsh and cut 10000 from the numbers, also accounting for random attrition, winter prep and a possible underestimation of losses against Rob.

So, on their own they might be able to field roughly 27000 men. Let's prep that up with 10000 traitors from Tarly and others (most defectors would probably opt to remain neutral until one side gains the upper hand). That's 37000.

On the other side Highgarden alone should have enough men and resources to resist a prolonged siege. Starving them out is not an option. But the assumption that they would hide behind their walls and let the Lannisters ravage their land (before winter!) is also very shaky. So Old O would call her banners against the Lannisters to find out than some don't turn up and a few are even rumored to have switched sides, and Dornish support didn't turn up at all.

Let's assume Highgarden could muster some 100k men at the beginning of the war, if they had wanted to. 10k lost through attrition and battle (again being harsh). 10k defect. 20k wait for the shituation to resolve itself. 15-20k being bound by Greyjoy forces (in the book they took the Arbor and some settlements along a major river, and continue to plague the countryside). That leaves them at around 40k. So even in their worst shape, Highgarden can match the Lannisters, unless I seriously underestimated the number of defections. That means open battle. A prolonged siege is impossible (WINTER IS COMING HURR) and the Tyrell men alone could take on any attacker, although they would probably not win by default. The show presents us with a storm, but without given us any context or showing the actual situation (because the writers know fuckall about sieges and shit), and makes it look like an easy win for the Lannisters, when they should have endured predictably severe losses, after which their chances of actually defeating Dany's forces would have been very slim. But then, the Unsullied would have never gotten around Dorne to invade the Westerlands with the Ironborn controlling the whole damn area. Look at the fucking map. This is infuriatingly stupid.

The whole plan is ridiculous anyways and completely relies on a fucking deus ex (although the staging with at least somewhat mediocre, compared to the outright horror of most of the show). It would have been much more sensible to take Harrenhall and advance on Casterly Rock overland. I counted 7,392~ soldiers which would be a farely standard army size for a early/mid medieval europe-like army.

The cavalry numbers and placement are fucking laughable though. Then again it is the show that had a cavalry charge into a dense wood and a cav charge into spears.
