We don't. It was scripted for them to have the death happen offcamera, so it seems that D&D deliberately left it open for him to return (like what happened with The Hound).
Stephen Dillane didn't enjoy the role though, so that makes it less likely that he'll return. Not sure what they'd do with Stannis either now. The Hound was set up to return in the books.
